High-speed Cooking Ovens

The perfect blend of microwave and convection technology, high-speed cooking ovens deliver crisp, quality food in a flash. To protect the life of your high-speed cooking oven, regular cleaning and maintenance is required.

Cleaning Recommendations

Cleaning procedures and recommendations may vary by unit. Always follow the OEM-specific cleaning and maintenance procedures outlined in the unit’s owners manual.


Turn off the oven and allow to cool properly before cleaning. DO NOT clean the oven until the oven display reads, “oven off: ready to clean.” DO NOT spray chemicals into the holes,
cavity, or any openings. Doing so may damage critical oven components and cause warranty void.

All personnel involved in cleaning kitchen equipment are required to wear the following safety equipment: chemical splash goggles, impervious gloves.

Daily Recommendations

  1. Turn off the oven by pressing the On/Off key. Slightly open the oven door and let the oven cool down for about 30 minutes.
  2. Remove the wire rack and lower jetplate. Push the wire rack towards the rear cavity wall and then lift up. Detach the wire rack from the jetplate and wash, rinse, sanitize and dry each part.
  3. Remove the air filter from the back or sides of oven. Rinse the air filter with hot water. Allow the air filter to dry completely. THE FILTER MUST REMAIN IN PLACE DURING OVEN OPERATION.
  4. Use a damp towel to remove large particles from the oven cavity. Spray oven cleaner on the interior and let it penetrate for five minutes. Clean the interior with a nylon scrub pad. DO NOT REMOVE OR SCRUB THE TOP GLASS JETPLATE!
  5. Wipe down the oven interior with a clean, damp towel and then towel dry.
  6. Clean the oven door with oven cleaner and nylon scrub pad. Wipe the oven door with a damp towel and then a dry one.
  7. Spray sanitizer onto a clean towel. Wipe the interior walls and the inside of the oven door.
  8. Reconnect the wire rack to the lower jetplate, and reinstall both items. Close the oven door. Reinstall the filter.
  9. Wipe the oven exterior with a clean, damp towel. Remove the lower panel and remove large food particles. Wipe the panel with a clean, damp towel.
Tips & Troubleshooting

If There are Issues with Operation:

  • Make sure the breaker is turned on. If tripped, place a service call to help determine why.
  • Verify the unit is plugged in.
  • If glass tiles inside the cooking compartment are broken or cracked, call for service IMMEDIATELY to prevent further damage.
